Mónica Vélez, CEO of Inversiones y Negocios and Founder of Rockefeller Café Panama, talks to TBY about opening the Rockefeller Café and beginning the work of making it a true landmark in the country.

What was the driving force behind opening Rockefeller Café, and how does it connect to the ambiance of New York’s Rockefeller Center?

The inspiration for Rockefeller Café stems from my admiration for the Rockefeller Center in New York, a place known for its vibrant mix of art, culture, and social life. I wanted to recreate that dynamic atmosphere here in Panama. Our café is strategically located in Soho City Center, right in the heart of the city, with the goal of becoming a cultural and social hub. We aim to attract local figures from various fields—business, politics, and the arts—and create a space where they can enjoy fine dining, live performances, and the richness of local artistry and gastronomy. Our vision is to build a community that values sophistication and cultural engagement, much like what you would experience at Rockefeller Center.

How did your extensive background in business communication influence your decision to venture into the café business?

My background in business communication significantly influenced this venture. Over the past 25 years, owning a business communication medium has given me a keen understanding of the needs and preferences of professionals. I noticed that many cafés and restaurants lacked attention to privacy and acoustics, often leading to overheard conversations and a less comfortable atmosphere. I wanted to create a space where business discussions could occur in a more private and refined setting. Rockefeller Café has been designed with careful consideration of acoustics and spatial layout to ensure that patrons have a comfortable and discreet environment for their meetings and conversations.

Can you highlight some of the unique features and attractions that set Rockefeller Café apart from other establishments?

Rockefeller Café offers several unique features that distinguish it from other places. We feature live performances by emerging artists and Cuban son music during lunchtime, which adds a lively and engaging ambiance to our café. Our menu includes exclusive recipes crafted by Julio Bravo, our chef who is aspiring for a Michelin star. Each dish is designed to provide a distinctive culinary experience. Additionally, we have the Rockefeller Cup, a special offering inspired by Milan’s fashion scene, which includes double beers or cocktails and an exclusive Geisha experience. We also have a personal touch with our barista, who can draw a portrait of guests on their cappuccino. For a more intimate experience, we offer a private bar service at each table. Our commitment to sustainability is reflected in our menu, which includes vegan, gluten-free, keto, and kosher options. Finally, we showcase works by Panamanian artists, integrating local art into our café experience.

What are your future plans for Rockefeller Café, and how do you envision its role in Panama’s cultural and business landscape?

Our vision for Rockefeller Café is to establish it as a landmark in Panama, known for its blend of culture, sophistication, and exceptional dining. We plan to continue supporting local artists and chefs while fostering a space that encourages both professional networking and social interaction. We want Rockefeller Café to be the preferred venue for networking events, cultural activities, and enjoying high-quality food and music. Our goal is to build a community where professionals, artists, and enthusiasts of fine living can come together and experience something truly unique. We are excited about the future and eager to expand our offerings and enhance the café’s role in Panama’s vibrant cultural scene.
